Peach Chai Shortcake

Just gimme them peaches!  Nothing says summertime like a fruit-filled dessert and this one has it all.  Juicy peach filling is sandwiched between a simple, buttery biscuit, then gets a crown of chai infused whipped cream.  By using pie filling in place of fresh fruit, you can skip the peeling and pitting and spend your summer’s end in relaxation mode.

*If you don’t have chai spice, cinnamon makes a fine substitute.

Ingredients:

2 Cups all-purpose flour

2 Tablespoons sugar

1 Tablespoon baking powder

1/4 teaspoon salt

1/2 stick cold butter

1 Cup milk

1 Cup Heavy Whipping Cream

1/4 Cup powdered sugar

2 teaspoons chai spice, divided

1  can (21 ounce)  can peach pie filling

Baking Instructions:

  1.  Heat the oven to 425 degrees and line a cookie sheet with parchment paper.
  2.  Place flour, sugar, baking powder, and salt into a large mixing bowl.  Whisk to combine.
  3.  Using a box grater, grate the cold butter into the flour mixture.  Work the butter into the flour until coarse crumbs form.
  4.  Stir in milk to form a dough.  Take care not to over mix.
  5.  Roll dough into a disc about 1/2 inch thick.  Use a drinking glass to cut out 3 biscuits.  Roll dough out a second time and cut out three more biscuits.  Discard unused dough.
  6.  Bake for 12 minutes, or until lightly browned on top.
  7.  Using a stand or a hand mixer, whip the cream until it forms stiff peaks.  Add the powdered sugar and 1 1/2 teaspoons of the chai spice and whip to combine.
  8.  Pour the peach filling into a medium bowl and use a spoon to break the peach slices up into thirds.  Microwave the filling for one minute to warm it up.
  9.  To assemble the shortcakes, slice the biscuits horizontally.  Place the bottom halves onto plates and scoop a generous amount of the filling onto each one.  Dollop the chai whipped cream onto each shortcake before topping it with the second half of the biscuit.  Sprinkle the biscuit tops with chai spice and serve.
